{Recipe} Breakfast Burritos

In the past I’ve spoken about trying to find some breakfast ideas that I can make ahead and freeze for hubby to take with him on work days.

One of the recipes I discovered was Breakfast Burritos.

Just like the Egg Muffins, I found these on Second Chance To Dreams collection of 25 make ahead back to school breakfasts. Originally from Mom On Timeout.

I have used some different ingredients and made them a little healthier. You could really use any ingredients you like. I have made these 4 times now and used different ingredients each time, with the exception of the wraps, cheese and eggs which are the staple ingredients.

Ingredients:

12-14 wraps (tortillas)
8 eggs
1/4 cup of milk
Approx 3 cups of grated cheese
1 sweet potato
2 potatoes
1 diced capsicum
4 rashers of bacon
1 1/2 cups of diced ham
1 eggplant

Method:

Mix the eggs and milk in a bowl. Then cook the eggs in a fry pan, making scrambled eggs.

Fry the bacon. Allow to cool and then dice (or you could dice it before cooking).

Peel the potato and sweet potato and cut into small cubes, along with the eggplant. Cook. (I cooked mine in my vegetable steamer).

Place each of the ready ingredients into bowls making a production line.

Lay two tortillas at a time out and layer your ingredients in the centre. Do not put too much inside or they may fall apart when you wrap them. You can mix and match or make them all the same, it is up to you :-)

Fold the edge of the tortilla closest to you over the centre ingredients, then fold each side in before rolling up the tortilla.

Wrap in glad wrap and place in the freezer. (Mom on Timeout talks about flash freezing the burritos before wrapping in glad wrap. I did not do this and mine were fine.)

   

Hubby LOVES these. He thinks I am the best cook in the world with all the new recipes I am making for him. Unbeknownst to him, they are all pretty simple. :-)

He grabs them out of the freezer when he leaves in the morning and heats them in the microwave when he gets to work. I originally made them so he could eat on his way to work but he is trying not to eat in the new car (we will see how long this lasts).

There are so many varieties you can make with these. You really can put in them what ever you like. The second time I made them I used chicken loaf instead of bacon and ham as that’s what I had in the fridge. I also used mushroom instead of the capsicum.

The ones I made yesterday, I used tomato. The options are endless.
